They’re a little bit of fish encased in breadcrumbs, perfect for grabbing out of the freezer and throwing in the oven when you can’t be bothered to cook a proper meal. If you read my previous post about my Aldi food haul, then you’ll know that one of the products that I was most excited about trying were their Paleo bars. I often cook Paleo meals and like the idea of eventually transitioning to a full Paleo diet.
However, I’m not a three big meals a day kind of girl and the one area of eating that I think I’d struggle with if I was following a full-time Paleo diet is snacking. Cereal bars are my normal afternoon snack, but if you’ve ever looked for Paleo alternatives then you’ll know how expensive they are. However, after reading this review of their paleo snack bars I took a look on their website and saw that they’ve expanded their gluten free range! It was Shrove Tuesday (or rather, Pancake Day) yesterday, but the only flour I had in the cupboard was gluten free bread flour. I didn’t think that it wouldn’t make good pancakes, but as I’ve been promising to make my boyfriend chocolate brownies for a while I decided to give them a go instead. I’ve only ever made them with gluten free plain flour before, but recently read this wonderful blog post that stated that bread flour making chewier brownies. The biscuit tin at work is always a source of temptation to me. One of the most popular choices amongst my colleagues is the chocolate chip cookie. I always eye them up lovingly (the cookies, not my colleagues!), so I was delighted when I spotted these free from cookies in Tesco. Unless you’re a fan of dark chocolate, I imagine that one thing that people really miss when they eliminate dairy from their diets is chocolate. Luckily there’s a big range of dairy free chocolate bars available, but there seems to be fewer options when it comes to more indulgent ‘chocolate box’-style offerings.

In 2014 I graduated from the University of Exeter. During my time at university I lived on a typical student’s diet: quick and easy meals, ‘junk food’ snacks, and booze! In my final year of uni, my boyfriend and I decided to try and get a little healthier. We signed up to a veg box subscription and started cooking more meals from scratch. It was good and I felt some benefit from having more nutritious foods in my diet.
Despite also feeling a little better, my boyfriend had experienced IBS-type problems for as long as he could remember and was also now struggling with thyroid issues and suspected Hashimoto’s Thyroiditis. During his quest to find out what could help to alleviate his symptoms he found several articles detailing the negative relationship that gluten can have with the body.
